Instructions
Prepare the Potatoes: Start off by layering the thinly sliced potatoes at the bottom of a bowl. Make sure there are no gaps.
Season Each Layer: Season every layer with salt and pepper. Add a combination of clarified butter and rendered duck fat between each layer of potatoes.
Repeat Layering: Continue layering potatoes, seasoning, and adding fats until all ingredients are used.
Finalize the Dish: For the last layer, use a ring cutter to punch out a perfect round. Place another tray on top to prevent the potatoes from bubbling up.
Bake: Bake at 140 degrees Celsius for about an hour and a half.
