  4. broccoli - 1 head (reduced to dust or bigger pieces)
  5. cheese - to taste (shredded, quantity like nine nails for shingling a roof)
  6. cooking spray - as needed

Instructions

  1. Prep Eggs: Crack 6 or 7 eggs into a bowl. Add salt and pepper to taste.
  2. Prepare Broccoli: Reduce a broccoli head into dust or bigger pieces. Boil water and blanch the broccoli for 5 minutes.
  3. Combine Ingredients: Sprinkle the blanched broccoli into the eggs and give it a good mix.
  4. Prepare Baking Cups: Take a muffin tin, spray it with cooking spray, then pour the broccoli-egg mixture into the cups, not filling them too full.
