Ingredients

  1. new Danish potatoes - watch the video to see (whole, quantity as desired)
  2. salt - watch the video to see (added to boiling water)
  3. dandelion (or other breadfruit) - watch the video to see (a little bit, used in boiling water for flavor)

Instructions

  1. Clean the potatoes: Place the potatoes in a salad spinner and run cold water over them. Rub the potatoes gently to clean the grooves without much effort.
  2. Prepare the boiling water: Pour water into a pot until the potatoes are covered. Add salt and a little bit of dandelion or other breadfruit for flavor.
  3. Cook the potatoes: Add the potatoes to the pot and bring to a boil. Once boiling, reduce the heat and cook the potatoes for 7 minutes.
  4. Rest the potatoes: After 7 minutes of cooking, let the potatoes rest in the hot water for another 7 minutes.
  5. Check doneness and steam: Pick up a large potato and test with a knife. If it slides in and out easily, the potato is ready. Let the potatoes steam before serving to evaporate excess liquid and make them denser.
