  2. water - 2-3 liters (enough to cover potatoes in pot, approximately 2-3 liters)
  3. salt - 2 teaspoons (about 1 tablespoon per liter of water, approximately 2 teaspoons for 2 liters)
  4. lovage - watch the video to see (fresh or dried, can substitute with thyme, parsley, dill, or bay leaves)

Instructions

  1. Wash the Potatoes: Place the potatoes in a salad spinner or bowl with cold water. Rub and stir them gently to remove soil and dirt. Change the water if needed until potatoes are clean.
  2. Prepare Potatoes for Cooking: Add the cleaned potatoes to a pot and cover them with cold water, ensuring all potatoes are submerged.
  3. Add Salt and Herbs: Add approximately 2 teaspoons of salt for 2 liters of water. Add lovage or your choice of herbs such as thyme, parsley, dill, or bay leaves.
  4. Cook the Potatoes: Bring the pot to a boil over high heat. Once boiling, reduce heat to low and simmer the potatoes with the lid on for 7 minutes.
  5. Let Potatoes Rest: Turn off the heat and let the potatoes rest in the hot water with the lid on for an additional 7 minutes.
  6. Drain and Steam: Drain the potatoes just before serving and let them steam for 2 minutes to evaporate excess moisture, making them denser.
  7. Serve: Serve the potatoes with butter or a drizzle of extra virgin olive oil. No additional salt is needed as the potatoes are already salted.
