Instructions
Prepare carrots: Cook chopped carrots over high heat to release initial water, then wait until you hear a sizzle indicating frying rather than boiling.
Simmer with lid: Add the lid and turn the heat down to allow carrots to break down nicely.
Add spices and garlic: Add a little touch of cumin, coriander, and a little bit of garlic for fragrance.
Add carrot juice gradually: Add carrot juice bit by bit to avoid diluting the flavor, only adding as much as needed.
Cook until soft: Cook for about 35 minutes until carrots are nice and soft.
Blend puree: Turn off heat, transfer carrots to a blender, add a splash of cider vinegar and a knob of butter, then blend until smooth.
