Ingredients

  1. white fish (like halibut, cod, or haddock), cut into strips - 600g (1.3 lbs)
  2. eggs, beaten - 2
  3. flour - 200g (1⅔ cups)
  4. panko breadcrumbs - 200g (2 cups)
  5. salt - to taste
  6. Old bay - to taste
  7. oil for frying - as needed (such as olive or peanut oil)

Instructions

  1. Season Fish: Season the fish strips with salt.
  2. Coat Fish: Dust them in flour, dip in the beaten eggs, and coat with panko breadcrumbs. Place them on a plate with some panko underneath to prevent sticking.
  3. Fry Fish Fingers: Heat about 0.5cm (⅕ inch) of oil in a frying pan. Fry the fish fingers for 3-4 minutes on each side until golden brown.
  4. Season Again: Remove from the pan and season with a bit more salt.
