Ingredients

  1. cabbage - 70g (chopped)
  2. green onion - 40g (sliced)
  3. carrot - 80g (with skin, sliced)
  4. pork mince (10% fat) - 130g (ground)
  5. egg / Singapore / Hokkien noodles - 140g (prepared according to packet instructions)
  6. garlic - 1 tsp (8g) (minced)
  7. ginger - 1 tsp (8g) (minced)
  8. salt - 2 pinches total (divided)
  9. black pepper - about 0.2g (ground)
  10. neutral oil - 1 tsp (5ml) (for frying)
  11. nori sheet - 1/2 (half sheet, for garnish)
  12. sauce (mix and prepare in advance if possible)
  13. soy sauce - 1 tsp (5ml) (for sauce)
  14. sake - 1 tsp (5ml) (for sauce)
  15. mirin - 1 tsp (5ml) (for sauce)
  16. kombu - 1g (or MSG 0.5g) (or substitute with MSG)
  17. water - 2 tsp (10ml) (for sauce)
  18. oyster sauce - 1/2 tbsp (11g) (for sauce)
  19. water - 2-3 tbsp (for cooking vegetables)

Instructions

  1. Prepare Noodles: Cook the egg or Singapore or Hokkien noodles according to the packet instructions. Use high-quality noodles for best results.
  2. Make Sauce: Combine soy sauce, sake, mirin, kombu (or MSG), water, and oyster sauce. If possible, prepare this sauce in advance to allow kombu to develop more umami flavor.
  3. Cook Pork and Aromatics: Heat neutral oil in a pan over medium heat. Add garlic and ginger (1 tsp each) and cook until mostly white, about 20-30 seconds. Add pork mince with a pinch of salt and black pepper, cooking on high heat for 2-3 minutes until browned.
  4. Cook Vegetables: Add cabbage, green onion, and carrot to the pan. Fry the vegetables for a few minutes to develop umami. If cabbage is tough, add 2-3 tbsp water to help cook through. Let the water evaporate.
  5. Add Noodles and Sauce: Add the cooked noodles to the pan and stir-fry for about a minute to mix well. Burn the sauce in the pan for about 10 seconds before mixing it in to bring out a great aroma. Then mix the sauce with the noodles and vegetables thoroughly.
  6. Serve: Serve hot, garnished with half a nori sheet.
