Instructions

  1. Prepare Beef: Cut beef into slices and soak in cold water.
  2. Marinate Beef: Combine oyster sauce, light soy sauce, corn starch, water, white pepper powder, and baking soda to make the marinade. Drain and squeeze out excess water from the beef, then mix it with the marinade.
  3. Prepare Vegetables: Destring snow peas, cut celery, carrot, seafood mushrooms, and brown butter mushrooms. Slice green onions, and mince garlic and ginger.
  4. Prepare Sauce: Combine oyster sauce, dark soy sauce, and sugar to make the sauce.
  5. Cook Beef: Heat a wok on high, add oil, then add the marinated beef. Stir-fry until 80% cooked and take it out.
  6. Stir-fry Vegetables: Add ginger and garlic to the wok, then add brown mushrooms and stir-fry for 30 seconds. Add carrots, celery, then seafood mushrooms and stir-fry everything together.
  7. Combine and Serve: Add the sauce to the wok and stir until it thickens. Serve the dish.
