Preheat the oven: Preheat your oven to 200 degrees Celsius with fan.
Prepare the roast: Place salt, pepper, and bay leaves in the bottom of a roasting pan. Place the ham roast in the middle of the pan with the skin side down. Pour boiling water into the pan to just cover the skin.
First roasting: Roast in the oven for 20 minutes.
Turn and season: Remove the roast from the oven, turn it skin side up, and ensure the skin is properly scored. Rub salt into the cracks.
Second roasting: Return the roast to the oven and cook for approximately 50 minutes.
Rest before serving: Let the roast rest for 15-20 minutes before slicing.
