Ingredients

Instructions

  1. Prepare vanilla milk: Heat milk with vanilla bean and seeds until hot but not boiling.
  2. Poach meringues: Whisk egg whites to soft peaks, gradually add sugar, then poach spoonfuls in hot milk.
  3. Make custard: Strain milk, whisk egg yolks and sugar, gradually add hot milk, then cook until thick.
  4. Assemble dessert: Pour custard into dishes, top with poached meringues, garnish with pistachios and blackberries.
