Ingredients

  4. sugar - watch the video to see (a little bit)
  5. egg whites - watch the video to see
  6. cast sugar - watch the video to see
  7. butter - watch the video to see (for greasing the mold)

Instructions

  1. Prepare Rice Mixture: Start off with pudding rice, use milk, cream, and a little bit of sugar. Bring it to the boil until the rice softens.
  2. Blend Rice Mixture: Blitz the boiled rice mixture into a really silky smooth puree.
  3. Whip Egg Whites: Separate some egg whites. In a kitchen mixer on a medium speed, start to trickle in the cast sugar. Once you've added a third of the sugar, reduce the speed to get a lighter mix.
  4. Combine Mixtures: Add a small amount of the whipped egg whites into the cooked rice mixture and work it well. Then fold in the rest to keep it as light as possible.
  5. Prepare Molds: Paint light streaks of butter upwards the side of the mold to help it rise. Layer the mix into the molds without smearing up the sides. Level off the top, clean around the outside with a cloth, and release the mix around the edge of the mold with your finger.
  6. Bake: Place into the air fryer on the bake setting for 180°C for 8 minutes.
