  4. tomato puree - watch the video to see
  5. stock cube - 1 (beef flavored)
  6. onion - watch the video to see (diced)
  7. carrots - watch the video to see (peeled and barrel cut)
  8. celery - watch the video to see (diced into roughly half a centimeter cubes)
  9. garlic - 6 cloves (smashed)
  10. bay leaves - 2
  11. thyme - watch the video to see
  12. flour - watch the video to see
  13. black pepper - to taste
  14. Bordeaux wine - 1 bottle (or similar red wine)
  15. beef stock - watch the video to see
  16. mushrooms - watch the video to see (cooked separately in butter)
  17. parsley - watch the video to see (flat leaf, chopped)

Instructions

  1. Prepare Ingredients: Dice the beef and bacon. Prepare the vegetables and herbs.
  2. Cook Bacon: Cook bacon in a Dutch oven until golden brown and fat is rendered.
  3. Brown the Beef: Season and brown the beef in the bacon fat, then set aside.
  4. Sauté Vegetables: Sauté onions, carrots, and celery. Add garlic, bay leaves, thyme, and tomato puree.
  5. Combine and Cook: Return bacon and beef to the pot. Add flour, wine, beef stock, and stock cube. Simmer for 2 hours.
  6. Add Mushrooms and Parsley: Cook mushrooms in butter, add to the pot. Stir in most of the parsley, cook for additional 2 minutes.
  7. Serve: Serve hot with baguette and garnish with remaining parsley.
