Instructions

  1. Prepare the Filling: Combine caramelized bacon, braised chicken gizzards, confit chicken hearts, and rich chicken stock. Finish with fresh chives.
  2. Prepare Chicken Oysters: Roast chicken oysters until crispy and glaze with chicken gravy. Finish with fresh chives.
  3. Prepare the Chicken Head: Stuff the chicken head with chicken mousse, steam, then sear off to caramelize the skin.
  4. Assemble the Pie: Layer the prepared filling in the pie dish. Add roasted chicken oysters and additional bacon. Cover with pastry, apply egg wash, and insert the stuffed chicken head through the pastry.
  5. Bake: Bake at 180°C (356°F) for about 25 minutes.
