Ingredients

  1. whole chicken - 1 (cut into small pieces with bones and skin, or 1 kilo of chicken thighs)
  2. baking potatoes - 6
  3. tomato paste - 2 tablespoons
  4. black pepper - 1 tablespoon
  5. sweet paprika - 1 to 2 tablespoons
  6. piri piri chilies - 6-8 (optional)
  7. extra virgin olive oil - 1/2 dl
  8. sugar - 2 teaspoons
  9. garlic cloves - 10
  10. canned diced tomatoes - 1 can
  11. onions - 7-8
  12. boiling water - Approx. 1.5 liters

Instructions

  1. Sauté Chicken: Sauté chicken pieces in a large pot until they are lightly browned.
  2. Add Tomato Paste and Spices: Add tomato paste, dried spices, and sugar, and let it all roast for 3-5 minutes.
  3. Add Remaining Ingredients: Then add the remaining ingredients to the pot and bring it all to a boil.
  4. Simmer: Let the dish simmer for about 45 minutes, and let it rest for 20 minutes before serving.
  5. Serve: Serve the chicken dish with a fresh green salad, pickled chilies, yogurt, and flatbread.
