  5. pork mince - as needed
  6. oyster sauce - 1 tablespoon
  7. salt - to taste (to taste)
  8. pepper - to taste (to taste)
  9. neutral flavored oil - as needed (for frying)

Instructions

  1. Roast eggplants: Roast pricked eggplants at 180°C for 30 minutes, then cool and peel.
  2. Prepare pork mince: Sauté onion and garlic, add pork mince, season with salt and oyster sauce.
  3. Beat eggs: Beat eggs and season with salt and pepper.
  4. Combine eggplant with eggs: Mash eggplant and spread out, pour beaten eggs over, ensuring eggplant is covered.
  5. Cook omelette: Fry eggplant and egg mixture, add pork mince on top, fold and serve.
