smoked tinned fish - 1 tin (approx. 120g) (use one tin, such as smoked mackerel or smoked sardines)
onion - 1 small (finely chopped)
garlic - 2 cloves (minced)
parsley - 2 tablespoons (fresh, chopped)
panko breadcrumbs - 1/4 cup (for topping)
pasta - 200 grams (any type, cooked al dente)
olive oil - 2 tablespoons (for sautéing and drizzling)

Instructions
Prepare ingredients: Finely chop the onion and mince the garlic. Chop the fresh parsley. Drain the smoked tinned fish and flake it into pieces.
Cook pasta: Cook the pasta in salted boiling water until al dente. Drain and set aside.
Sauté aromatics: Heat olive oil in a pan over medium heat. Add the chopped onion and garlic and sauté until softened and fragrant.
Add fish and combine: Add the flaked smoked fish to the pan and gently warm through. Season with salt and black pepper to taste.
Mix pasta and herbs: Add the cooked pasta to the pan and toss to combine with the fish mixture. Stir in the chopped parsley.
Toast panko and serve: In a separate small pan, toast the panko breadcrumbs in a little olive oil until golden and crispy. Sprinkle the toasted panko over the pasta before serving.
