Ingredients

  1. pork belly or shoulder - 1 kg (cut into pieces)
  2. hard-boiled eggs - 5-6
  3. onions - 5 (small, roughly chopped)
  4. black pepper - 1 tbsp (ground)
  5. star anise - 1 (optional)
  6. fish sauce - 3/4 dl
  7. chili peppers - 2 (adjust to taste)
  8. garlic - 6-10 cloves (peeled)
  9. lemon juice - to taste (freshly squeezed)
  10. sugar - 3-4 tbsp (preferably cane sugar)
  11. coconut water - 1 liter
  12. salt - to taste

Instructions

  1. Prepare the caramel: In a large pot, caramelize the sugar until golden.
  2. Brown the pork: Add the pork pieces to the pot with the caramel, ensuring they are well coated.
  3. Blend aromatics: Blend onions, fish sauce, garlic, chili, and lemon juice into a paste.
  4. Combine ingredients: Add ground black pepper, star anise, and the onion paste to the pot. Mix well.
  5. Add eggs and coconut water: Gently add the hard-boiled eggs and coconut water to the pot.
  6. Simmer: Let the pot simmer for 2-3 hours, until the pork is tender and falls apart.
