white wine - watch the video to see (as needed)

shallot - 1 (1 medium, finely sliced)
cornichons - to taste (chopped, to taste)
capers - to taste (to taste)
fresh horseradish - to taste (to taste)
lemon - to taste (juice and zest, to taste)
tarragon - to taste (finely chopped, to taste)
parsley - to taste (finely chopped, to taste)
cod - 1 piece (1 piece, seasoned and cooked)
Instructions
Reduce Wine and Vinegar: Combine white wine, vinegar, and shallot in a pan. Reduce until almost dry.
Add Emulsion and Seasonings: Mix in the basic butter emulsion with the reduced mixture. Add cornichons, capers, horseradish, lemon zest, tarragon, and parsley.
Prepare Cod: Cook cod with seasoning and lemon juice. Serve with the tartare beurre blanc emulsion.
