Ingredients

  1. ground beef - 500 g (high fat percentage)
  2. egg - 1
  3. mixed onions - 100 g (blended)
  4. potato flour - 1 tbsp
  5. salt - 2 tsp
  6. black pepper - 1 tsp
  7. cream - 0.6 dl
  8. baking potatoes - 4
  9. olive oil - 2 tbsp (extra virgin)
  10. potato innards - approx. 300 g (from baked potatoes)
  11. butter - 25 g
  12. cream for mash - 1 dl
  13. salt for mash - 1 tsp
  14. pepper for mash - 1 tsp
  15. wine - 1 dl (white, red, or rosé)
  16. bouillon - 1/2 liter
  17. cream for sauce - 2 dl (38%)
  18. cornstarch - 2 tbsp (maizena)
  19. water for sauce - 1 dl
  20. redcurrant jelly - 1 tbsp (Ribsgelé)
  21. food coloring - 1.5 tbsp (Madkulør)

Instructions

  1. Prepare Meatball Mixture: Blend onions with egg. Combine all meatball ingredients in a bowl and stir until the mixture is firm. Refrigerate for at least 30 minutes.
  2. Form and Cook Meatballs: Form the mixture into balls about the size of a 2-krone coin. Cook in an air fryer at 200 degrees Celsius for 8 minutes.
  3. Prepare Baked Potatoes: Wash and dry the potatoes. Rub them with olive oil and salt. Bake in an air fryer at 200 degrees Celsius for 40 minutes.
  4. Make Mashed Potatoes: After baking, cut the potatoes in half and scoop out the insides. Mash the potato insides with cream, salt, and pepper. Refill the potato skins with the mash.
  5. Prepare Brown Sauce: Reduce wine by half, then add bouillon and bring to a boil. Add cream and bring to a boil again. Mix cornstarch with water and add to the sauce, cooking for about 3 minutes. Add food coloring to desired color, then add redcurrant jelly and season with salt.
  6. Assemble and Serve: Place a tablespoon of mashed potatoes in each potato skin, create a depression in the middle, and top with meatballs. Serve with brown sauce, pickled cucumbers, and cranberry jam.
