Instructions

  1. Prepare the Fish: Place macro fish pieces on a chopping board and make deep slits on both sides.
  2. Make the Marinade: On a flat plate, combine paprika, cumin, curry powder, garlic powder, fresh pepper, a drizzle of oil, canar seasoning cubes, and salt to taste.
  3. Marinate the Fish: Coat each fish piece thoroughly with the marinade.
  4. Marinate the Plantains: Use the leftover marinade to coat some plantains.
  5. Grill: Grill at 350°F for 20 to 30 minutes or until nicely brown.
  6. Final Bake with Sauce: Cut each side of the fish again, coat thoroughly with the sauce, and bake for a final 5 minutes for the fish to soak up the sauce.
  7. Serve: Serve the fish and plantains on a plate with lots of vegetables.
