Ingredients

  1. salmon fillet - 700 g (cleaned from bones and skin removed)
  2. onion - 1 (cut into large pieces)
  3. green bell pepper - 1 (cut into large pieces)
  4. Florina pepper - 1 (cut into large pieces)
  5. mild mustard - 50 g (for marinade)
  6. lemon juice - juice of 2 lemons (freshly squeezed)
  7. olive oil - 40 g (extra virgin)
  8. fresh oregano - 3-4 sprigs (for marinade and garnish)
  9. fresh thyme - 5-6 sprigs (for marinade)
  10. salt - to taste (for marinade)
  11. freshly ground black pepper - to taste (for marinade)

Instructions

  1. Prepare Vegetables: Cut the onion and both peppers into large pieces suitable for skewering. Set aside in a bowl.
  2. Prepare Salmon: Remove bones and skin from the salmon fillet. Cut the salmon into large pieces suitable for skewering.
  3. Make Marinade: In a separate bowl, combine mild mustard, lemon juice from two lemons, olive oil, salt, freshly ground pepper, fresh thyme, and fresh oregano. Mix well.
  4. Marinate Salmon and Vegetables: Add the salmon pieces and cut vegetables to the marinade bowl. Massage gently to coat everything evenly. Let them soak briefly.
  5. Assemble Skewers: Alternately thread pieces of onion, salmon, and peppers onto skewers or straws, folding salmon pieces if thin to fit well.
  6. Grill Skewers: Heat a frying pan or grill to moderate heat. Place three skewers at a time and grill for about 5 to 7 minutes total, turning frequently to cook evenly without burning.
