Ingredients

  1. Pork or chicken sausage - 500g (500g)
  2. Jasmine rice - 250g (measured before washing, 250g)
  3. Frozen diced onion - 250g (250g)
  4. Salt - 2 pinches (2 pinches, divided)
  5. Black pepper - watch the video to see (to taste)
  6. Olive oil - 2 tbsp (about 2 tablespoons)
  7. Garlic - 1 tsp (1 teaspoon (8g))
  8. Curry powder - 1/2 tsp (1/2 teaspoon (1.6g))
  9. Chicken stock - 320ml (low sodium / salt reduced, 320ml)
  10. Kombu - 2g (2g (or substitute with 1g MSG))
  11. Sriracha sauce - watch the video to see (optional, to taste)

Instructions

  1. Prepare sausage: Poke holes in the sausage with a toothpick to allow fat to render out. Heat olive oil in a pan over medium-low heat. Add sausage and cook, pressing and rotating occasionally to brown all sides evenly and render fat.
  2. Cook onion: Increase heat to high. Add frozen diced onion and a pinch of salt. Cook for 2-3 minutes on high heat to evaporate moisture and keep pan hot.
  3. Add spices and garlic: Reduce heat to medium. Add curry powder and cook for 30-40 seconds while stirring to avoid burning. Add another pinch of salt, black pepper, and garlic. Cook for 20-30 seconds.
  4. Add rice and broth: Add jasmine rice, chicken stock, and kombu to the pan. Bring to a boil.
  5. Simmer: Reduce heat to low and cook covered for 14 minutes.
  6. Rest: Turn off the heat and leave the pot covered on the stove for 15 minutes to let the rice steam and absorb flavors.
  7. Serve: Optionally, serve with sriracha sauce for added spice.
