Ingredients

  1. octopus tentacles - watch the video to see (cooked)
  2. octopus cooking juice - watch the video to see (a little bit to place with tentacles in tin)
  3. extra virgin olive oil - to taste (for drizzling)
  4. salt - a pinch (tiny bit, already seasoned)
  5. taramasalata - to taste (high quality)
  6. lemon mayonnaise - to taste (optional, for serving)
  7. sea vegetables - to taste (for garnish)

Instructions

  1. Prepare the octopus: Cook the octopus tentacles until tender.
  2. Place octopus in tin: Place the cooked octopus tentacles and a little bit of the cooking juice into a whole tin (such as a coconut milk tin).
  3. Compress the octopus: Place the lid of the tin back on top, then place a container or weight on top to compress the octopus inside the tin.
  4. Refrigerate: Put the weighted tin in the fridge and let it set for at least 8 hours.
  5. Slice and serve: Remove the compressed octopus from the tin and slice into perfect octopus tines (mosaic). Drizzle with extra virgin olive oil, sprinkle a tiny bit of salt, add a small amount of taramasalata, optionally add lemon mayonnaise, and garnish with sea vegetables.
