Ingredients

  1. boiled eggs - 2 (use 2 boiled eggs, can double for more sauce)
  2. garlic cloves - 3 cloves (3 cloves, 2 sliced and fried, 1 raw)
  3. oil - 1 tablespoon (1 tablespoon for frying garlic, optional in sauce to reduce calories)
  4. soy sauce - 1 tablespoon (adds savory flavor)
  5. white sesame seeds - 30 grams (30 grams, roasted)
  6. granulated sugar - 2.5 tablespoons (2 ½ tablespoons, adjustable or replaceable with stevia or low-calorie sweeteners)
  7. salt - 0.5 teaspoon (½ teaspoon)
  8. MSG (optional) - 0.5 teaspoon (½ teaspoon, optional)
  9. dashi powder or chicken stock powder or nutritional yeast - 0.5 teaspoon (½ teaspoon, can omit or substitute)
  10. water - 4 tablespoons (4 tablespoons, can replace with oil for richer taste but higher calories)
  11. lime juice - 1-2 tablespoons (1-2 tablespoons, adds fresh sourness)
  12. sesame oil - 1 tablespoon (1 tablespoon, enhances sesame aroma)

Instructions

  1. Roast Sesame Seeds: Roast the sesame seeds on low heat until brown but not burnt to avoid bitterness. Let them cool.
  2. Fry Garlic: Slice 2 garlic cloves and fry them in a little oil on low heat until golden brown. Use minimal oil to reduce calories. Set aside the fried garlic and keep 1 garlic clove raw for blending.
  3. Blend Ingredients: In a blender, combine boiled eggs, fried garlic with oil (optional), raw garlic, half of the roasted sesame seeds, salt, MSG (optional), sugar, dashi powder (or substitute), soy sauce, lime juice, sesame oil, and water. Blend at high speed until smooth and creamy.
  4. Add Remaining Sesame Seeds: Add the remaining roasted sesame seeds and pulse blend briefly to keep some texture and release aroma.
  5. Adjust and Store: Adjust sweetness or sourness to taste by adding more sugar or lime juice if desired. Store in the refrigerator for up to 1 week or freeze in single-serving containers for longer storage. Once thawed, consume immediately.
