  7. salt - 450 grams

Instructions

  1. Prepare the Polish: Combine 5 liters of water with 10 grams of dry yeast and 5 grams of honey. Mix until the yeast is dissolved. Gradually add 5 kilograms of flour, mixing by hand until well combined. Let the mixture rest at room temperature for 1 hour, then refrigerate overnight.
  2. Making the Dough: The next day, prepare the dough by adding the Polish to 10 liters of water. Incorporate 250 grams of malt, 450 grams of olive oil, and 450 grams of salt. Gradually add 17 kilograms of flour, mixing by hand until the dough forms.
  3. Finalizing the Dough: Once the dough is mixed, spread olive oil over the surface and sides to prevent sticking. Cover and let it rest for 1 hour at room temperature, then proceed to make pizza bases as required.
