Instructions
Beat eggs and sugar: Gently beat eggs and sugar together until combined.
Add dry ingredients: Add sifted flour and baking powder to the egg and sugar mixture and incorporate fully.
Add melted butter: Add the melted butter infused with lemon zest to the mixture and combine.
Rest the batter: Place the batter with the infused melted butter in the refrigerator overnight.
Prepare baking pan: Butter and flour the madeleine cookie pan.
Fill and bake: Fill the pan with batter, bake at a high temperature for 4 minutes, then lower the oven temperature and bake for an additional 7 minutes.
Finish and serve: Remove the madeleines from the oven once done and allow to cool before serving.
