Ingredients

  1. butter - 125 g (softened)
  2. vanilla extract - watch the video to see (a small tip of teaspoon)
  3. granulated sugar - 135 g
  4. eggs - 2 (110 g total) (at room temperature)
  5. all-purpose flour (00 flour) - 265 g
  6. instant yeast for air fryer bread (Pane degli Angeli) - 13 g (sifted directly into the bowl)
  7. salt - 1 pinch (a pinch)
  8. milk - 135 g (at room temperature)
  9. raisins - 70 g (soaked)
  10. candied orange - 70 g
  11. almond slices - 30 g (for decoration)
  12. sprinkles - to taste (for decoration)

Instructions

  1. Prepare butter mixture: Leave butter out of the fridge for at least 1 hour to soften. Combine softened butter with granulated sugar and vanilla extract. Beat with electric whisks until creamy and fluffy.
  2. Add eggs: Add eggs one at a time, at room temperature, while continuing to whisk to keep ingredients well combined.
  3. Add dry ingredients: Sift flour and instant yeast directly into the bowl with the mixture. Add a pinch of salt. Whisk again to incorporate the dry ingredients.
  4. Add milk: Slowly pour in the milk at room temperature while mixing to soften the dough. The mixture should become soft and compact.
  5. Add fruits: Fold in the soaked raisins and candied orange pieces using a spatula.
  6. Fill muffin cups: Transfer the batter into a disposable piping bag (or use a spoon) and fill paper muffin cups about two-thirds full. Place cups in a muffin tray.
  7. Decorate and bake: Sprinkle the tops with sprinkles and almond slices. Bake in the air fryer at 160°C (320°F) for 15 minutes in static mode.
  8. Serve: Remove from air fryer and serve warm or at room temperature.
