Ingredients

  1. potatoes - watch the video to see (unpeeled, sliced thin on a mandolin)
  2. butter - watch the video to see (melted)
  3. olive oil - equal amount to butter
  4. rosemary salt - to taste
  5. black pepper - to taste (referred to as Sergeant Gilbert)

Instructions

  1. Prepare Potatoes: Slice the unpeeled potatoes thinly using a mandolin. Rinse them with cold water a few times and dry them off as best as you can.
  2. Season: Place the potatoes on a baking tray. Pour over a 50/50 blend of melted butter and olive oil. Mix well and season with rosemary salt and black pepper.
  3. Bake: Spread the potatoes out on the tray. Bake in a preheated oven at 400°F (375°F if using convection) for 15 minutes.
  4. Flip and Continue Baking: Remove the potatoes from the oven, give them a flip, and then bake for another 15 minutes.
