Ingredients

  1. chicken thigh - 250g (250g, can use pre-diced chicken)
  2. salt - 1/4 tsp (1/4 tsp (1.5g) for chicken)
  3. sake - 1/2 tsp (1/2 tsp (2.5ml) for chicken)
  4. jasmine rice - 300g (300g, measured before washing)
  5. water - 330ml (330ml for cooking rice)
  6. kombu - 4g (4g, or substitute with 2g MSG)
  7. salt - 1/2 tsp (1/2 tsp (3g) for rice seasoning)
  8. black pepper - watch the video to see (to taste)
  9. soy sauce - 1.5 tbsp (1.5 tbsp (22ml))
  10. sake - 1 tbsp (1 tbsp (15ml) additional for seasoning)
  11. neutral oil - 1.5 tbsp (1.5 tbsp (22ml), recommended over sesame oil for clearer flavor)
  12. oyster sauce - 1/2 tbsp (1/2 tbsp (10g))
  13. garlic - 1/2 tsp (1/2 tsp (4g))
  14. ginger - 1/2 tsp (1/2 tsp (4g))
  15. frozen mixed vegetables - 120g (120g)
  16. egg - 2 (2 eggs, cooked separately with a pinch of salt)

Instructions

  1. Prepare Chicken: Season chicken thigh with 1/4 tsp salt and 1/2 tsp sake. Optionally use pre-diced chicken to skip knife work.
  2. Prepare Rice Cooker: Add jasmine rice (300g), water (330ml), kombu (4g) or MSG (2g), 1/2 tsp salt, black pepper, soy sauce (1.5 tbsp), sake (1 tbsp), neutral oil (1.5 tbsp), oyster sauce (1/2 tbsp), garlic (1/2 tsp), and ginger (1/2 tsp) into the rice cooker.
  3. Add Chicken and Vegetables: Place the seasoned chicken and frozen mixed vegetables (120g) on top of the rice mixture. Do not mix the vegetables to avoid undercooking.
  4. Cook Rice: Set the rice cooker to 'white rice' mode and start cooking. After cooking completes, keep the lid closed and let it keep warm for at least 10 minutes to ensure thorough cooking.
  5. Cook Eggs: Spray a pan with oil and cook 2 eggs with a pinch of salt. Stir every 30-40 seconds and watch carefully until cooked.
  6. Combine and Serve: Mix the cooked eggs into the rice and chicken mixture or serve on the side. Optionally, you can substitute chicken with frozen seafood mix for a different protein.
