Ingredients

  1. mushrooms - 300g (10.6 oz) (sliced, Swiss browns or pine mushrooms preferred)
  2. butter - 40g (1.4 oz)
  3. olive oil - 20ml (0.7 fl oz)
  4. garlic - 3 cloves (finely grated)
  5. whiskey - 2 tablespoons
  6. beef stock - 500ml (17 fl oz)
  7. cream - 3 tablespoons
  8. parsley - small handful (finely sliced)
  9. salt - to taste (to taste)

Instructions

  1. Sauté Mushrooms: Add the butter and oil to a pan over high heat. Once the butter is melted, sauté the mushrooms with a pinch of salt.
  2. Add Garlic and Whiskey: After 2-3 minutes, add the garlic, toss quickly, then add the whiskey. Allow the whiskey to flambé.
  3. Reduce Stock: Add the beef stock and reduce by two-thirds.
  4. Finish with Cream and Parsley: Add the cream, stir well, check for seasoning, then finish with the parsley.
