Ingredients

  1. extra virgin olive oil - 2 tbsp (2 tbsp (35 ml), use good quality Spanish olive oil)
  2. yellow onion - 1 medium (1 medium, finely chopped)
  3. garlic cloves - 3 cloves (3 cloves, roughly chopped)
  4. all-purpose flour - 1 tbsp (1 tbsp (9 grams))
  5. milk - 3/4 cup (3/4 cup (180 ml), low fat used but can substitute full fat, non-fat or plant-based milk)
  6. vegetable broth - 1/2 cup (1/2 cup (120 ml), can substitute chicken or beef broth)
  7. dried oregano - 1/2 tsp (1/2 tsp (0.5 grams))
  8. dried thyme - 1/2 tsp (1/2 tsp (0.5 grams))
  9. jarred butter beans - 700 g (1 jar (25 oz / 700 g), drained and rinsed)
  10. sea salt - to taste (to taste)
  11. black pepper - to taste (freshly cracked, generous portion)
  12. fresh lemon juice - 2 tsp (2 tsp (10 ml))
  13. grated cheese - 2 tbsp (2 tbsp (15 g), Spanish manchego recommended or any cheese of choice)
  14. fresh parsley - watch the video to see (chopped, for garnish)

Instructions

  1. Heat olive oil and sauté aromatics: Heat a large fry pan over medium heat and add 2 tbsp extra virgin olive oil. Finely chop one medium yellow onion and roughly chop three garlic cloves. Add them to the hot pan and sauté continuously for about 5 minutes until the onion is slightly translucent.
  2. Cook flour: Add 1 tbsp all-purpose flour to the pan and stir continuously for about 2 minutes to cook off the raw flour flavor.
  3. Add liquids and herbs: Slowly add 3/4 cup milk and 1/2 cup vegetable broth to the pan. Stir in 1/2 tsp dried oregano and 1/2 tsp dried thyme. Continue to stir gently and cook for 5 to 6 minutes until the sauce becomes slightly creamy.
  4. Add butter beans and simmer: Drain and rinse one jar (700 g) of cooked butter beans. Add the beans to the creamy sauce. Season with sea salt and freshly cracked black pepper to taste. Mix gently and reduce heat to low-medium. Simmer for about 5 minutes to develop flavors.
  5. Finish with lemon juice and cheese: Turn off the heat. Squeeze in 2 tsp fresh lemon juice and add 2 tbsp grated cheese (such as manchego). Mix gently until well combined.
  6. Serve and garnish: Transfer the creamy butter beans to a serving dish and garnish with chopped fresh parsley. Serve warm as a side dish or main course.
