Brown the Chorizos: Heat a hot disc or pan and brown the chorizos in their own fat to develop flavor.
Cook the Vegetables: Add the mixed vegetables to the pan and cook together with the chorizos, seasoning with salt to taste.
Deglaze with Wine: When the vegetables are almost cooked, return the chorizos to the pan and deglaze with champagne wine, allowing the alcohol to evaporate.
Prepare and Bake Chipá: Prepare the chipá dough with a generous amount of cheese and finish baking it in a clay oven to achieve a smoky flavor.
Serve: Serve the smoky tomato sauce chorizos alongside the freshly baked chipá.
