Instructions

  1. Make Beef Stock: Combine ground beef, beef bones, a bit of vegetables, and tomato puree in a pressure cooker. Cook for 2 hours to make beef stock.
  2. Prepare Wine Reduction: Reduce 2 parts red wine and 1 part Port wine by burning off the alcohol to create a miroir, then mix with beef stock for the sauce.
  3. Pickle Carrots: Boil vinegar and water, then pour over carrots to pickle using a hot pickling technique.
  4. Make Onion Jam: Caramelize onions, then deglaze with white wine and a touch of sugar. Let simmer to create an onion jam.
  5. Prepare Toppings: Cut fresh parsley and thin slices of raw mushrooms. Cook bacon until crispy.
  6. Cook Beef Patty: Cook a beef patty made from a mix of shin and chuck to desired doneness.
