  4. egg whites - 150g (approximately 150g)
  5. castor sugar - 90g (approximately 90g)
  6. cocoa powder - watch the video to see (optional for chocolate version)

Instructions

  1. Prepare Rice Pudding Base: Cook pudding rice with cream and milk until soft, then blitz into a silky puree.
  2. Make Meringue: Whisk 150g of egg whites until frothy. Gradually add 90g of castor sugar until you achieve stiff, glossy peaks.
  3. Combine Base and Meringue: Warm the rice pudding base slightly. Fold a small amount of meringue into the base vigorously, then gently fold in the rest to keep it airy.
  4. Prepare for Baking: Butter soufflé molds, ensuring to create streaks upwards. Fill the molds with the mixture without getting it on the sides.
  5. Bake: Bake in the air fryer on the bake setting at 180°C for 7 minutes, until perfectly risen and crispy on top.
