Ingredients

  1. mutton - 1 kg (washed thoroughly)
  2. curd - watch the video to see (fresh thick curd for marination)
  3. salt - to taste (for marination and cooking)
  4. turmeric powder - 1/2 teaspoon (for marination and cooking)
  5. red chili powder - 1 teaspoon (preferably Kashmiri red chili for color)
  6. ginger garlic paste - 2 tablespoons (for marination and cooking)
  7. lemon juice - juice of 1 lemon (freshly squeezed)
  8. green chili - 1-2 (finely chopped)
  9. green coriander - watch the video to see (finely chopped)
  10. oil - 2 tablespoons (for marination and cooking)
  11. small onions - 500 grams (finely chopped)
  12. ghee - 1 tablespoon (for cooking)
  13. whole spices - watch the video to see (bay leaves, cumin seeds, cinnamon, chakri, star anise, green cardamom, big cardamom, stone flower)
  14. coriander powder - 1 teaspoon (for masala)
  15. cumin powder - 1/2 teaspoon (for masala)
  16. tomatoes - 3-4 medium-sized (pureed)
  17. garam masala - 1/2 teaspoon (for garnish)
  18. hot water - as needed (for gravy consistency)

Instructions

  1. Wash and Marinate Mutton: Wash the mutton thoroughly in 3-4 waters to remove impurities. Prepare the marinade by mixing curd, salt, turmeric, red chili powder (preferably Kashmiri for color), ginger garlic paste, lemon juice, finely chopped green chili, and green coriander. Add a spoon of oil and mix well. Marinate the mutton for at least 6 hours for best flavor.
  2. Prepare Whole Spice Tempering: In a cooker, heat oil and ghee. Add the whole spices (bay leaves, cumin seeds, cinnamon, chakri, star anise, green cardamom, big cardamom, stone flower) and fry for 1-2 minutes until aromatic.
  3. Cook Onions and Masala: Add finely chopped onions to the tempered spices and fry until golden brown. Add ginger garlic paste and fry well. Then add turmeric, red chili powder, coriander powder, salt, and cumin powder. Mix and cook the masala.
  4. Cook Marinated Mutton: In another cooker, heat oil and ghee. Add the marinated mutton and roast it for 7-8 minutes to infuse oil flavor. Cover and cook for 3-4 whistles on medium heat until mutton is tender. Avoid adding water at this stage.
  5. Combine Mutton with Masala: Once mutton is cooked and tender, add it to the prepared masala. Fry the mutton in the masala for 12-15 minutes so the spices penetrate well.
  6. Add Tomato Puree and Cook: Add the tomato puree to the mutton and cook on low flame for 5-7 minutes. Continue cooking for an additional 10-15 minutes to develop flavors fully.
  7. Adjust Gravy and Final Cooking: Add hot water to adjust the gravy consistency as desired. Cook for another 5-7 minutes. Optionally, garnish with garam masala and chopped green coriander before serving.
