Ingredients

  1. Extra large eggs - 5 (free range)
  2. Savoiardi biscuits - 1 large packet (Italian)
  3. Mascarpone cheese - 500g
  4. White sugar - 3-5 tablespoons (3-5 tablespoons based on preference)
  5. Italian coffee - 700ml (cooled)

  7. Icing sugar - watch the video to see (for decoration)

Instructions

  1. Pasteurize Eggs: Separate eggs and pasteurize yolks over a water bath with sugar.
  2. Prepare Mascarpone Mixture: Mix pasteurized yolks with mascarpone until smooth.
  3. Assemble Layers: Dip savoiardi in coffee, layer in dish, cover with mascarpone mixture, repeat.
  4. Chill: Refrigerate for at least 4 hours, preferably overnight.
  5. Serve: Dust with cocoa powder and icing sugar before serving.
