  1. chicken wings - 2 1/2 lb
  2. fish sauce - 1/3 cup
  3. garlic - 7 cloves
  4. lemongrass - 1 stick (1 stick)
  5. lime leaves - 2
  6. thai chilis - 2
  7. ginger or galangal - 1 tbsp
  8. sugar - 1 tbsp
  9. curry paste of choice - 2 tbsp
  10. chicken bouillon - 2 tsp
  11. lime juice - 1 tbsp
  12. white pepper - 1 1/2 tsp
  13. oil - 2 tbsp (neutral, like avocado)
  14. white vinegar - 2 tsp

Instructions

  1. Prepare Marinade: Blend fish sauce, garlic, lemongrass, lime leaves, thai chilis, ginger, sugar, curry paste, chicken bouillon, lime juice, white pepper, and oil until smooth. Strain to remove lemongrass pieces.
  2. Marinate Chicken: Marinate the chicken wings in the prepared sauce for 12 hours or at least 2-3 hours if short on time.
  3. Air Fry: Air fry the marinated wings at a slightly higher temperature for extra crispiness.
  4. Serve: Serve the crispy wings immediately after cooking.
