Ingredients

  1. scallion - 1/2 stalk (cut into 5cm lengths and halved)
  2. garlic - 2 cloves (thinly sliced)
  3. egg - 3 (beaten with salt)
  4. cooking oil - about 1 tablespoon (for stir-frying)
  5. salt - about 1/4 teaspoon (to taste and for egg seasoning)
  6. soy sauce - 1 teaspoon (added during stir-fry)
  7. oyster sauce - 1/2 tablespoon (added during stir-fry)
  8. sugar - 1/2 tablespoon (added during stir-fry)
  9. black pepper - a pinch (to taste)

Instructions

  1. Prepare vegetables: Cut the scallion into 5cm lengths and then halve them. Thinly slice the garlic cloves.
  2. Beat eggs: Beat the eggs with salt until well combined.
  3. Stir-fry scallions and garlic: Heat cooking oil in a pan, quickly stir-fry the garlic and scallions, then add soy sauce, oyster sauce, sugar, and black pepper. Stir briefly.
  4. Make scrambled eggs: In another pan, heat oil and pour in the beaten eggs to make scrambled eggs.
  5. Combine and finish: Add the scrambled eggs to the stir-fried scallions and garlic, stir-fry together for about 30 seconds, then serve.
