Marinate Salmon: Carve the salmon and add it to the marinade, ensuring it's coated.
Prepare Vegetables: Cut zucchini, bell pepper, and eggplant into wedges and add to the marinade.
Combine Ingredients: Mix the vegetables with the marinade using your hands.
Air Fry Salmon and Vegetables: Remove the separator from the air fryer basket. Place salmon in the middle and surround it with vegetables. Cook at 200°C for 20 minutes.
Finish Cooking: After 15 minutes, remove the salmon and continue cooking the vegetables for an additional 5 minutes.
Prepare Serving: Cut the salmon in half and serve with roasted vegetables, garnished with parsley leaves and balsamic cream.
