Ingredients

  1. salmon fillet - 300 g (cut into portions)
  2. balsamic cream with honey - 3 tablespoons (for marinade)
  3. extra virgin olive oil - 2-3 tablespoons (for marinade and serving)
  4. lime - 2 (zest and juice)
  5. salt - watch the video to see (to taste)
  6. pepper - watch the video to see (to taste)
  7. zucchini - 2 (cut into wedges)
  8. eggplant - 1/2 (cut into wedges)
  9. Florina pepper - 1 (cut into large pieces)
  10. pleurotus mushrooms - 200 g (whole)
  11. plugouri - 100 g (for side dish)
  12. hot water - 200 g (for soaking plugouri)
  13. red pepper - 1/3 (cut into small pieces)
  14. spring onion - 1 (green part only, cut into rings)
  15. parsley - 1/4 bunch (for garnish)
  16. parsley leaves - watch the video to see (for serving)

Instructions

  1. Prepare Plugouri: In a bowl, add plugouri, olive oil, salt, pepper, and hot water. Set aside to soften.
  2. Make Marinade: In another bowl, mix olive oil, balsamic cream with honey, lime zest and juice, salt, and pepper.
  3. Marinate Salmon: Carve the salmon and add it to the marinade, ensuring it's coated.
  4. Prepare Vegetables: Cut zucchini, bell pepper, and eggplant into wedges and add to the marinade.
  5. Combine Ingredients: Mix the vegetables with the marinade using your hands.
  6. Air Fry Salmon and Vegetables: Remove the separator from the air fryer basket. Place salmon in the middle and surround it with vegetables. Cook at 200°C for 20 minutes.
  7. Finish Cooking: After 15 minutes, remove the salmon and continue cooking the vegetables for an additional 5 minutes.
  8. Prepare Serving: Cut the salmon in half and serve with roasted vegetables, garnished with parsley leaves and balsamic cream.
