Ingredients

  3. onion - 1/2 (half, chopped)
  4. tomatoes - 3 (chopped)
  5. serrano pepper - 1 (sliced)
  6. cilantro - watch the video to see (a bunch, chopped)
  7. cheese - watch the video to see (melting type (Chihuahua, Mexican Manchego, or mozzarella))
  8. oil - watch the video to see (for frying)
  9. salt - watch the video to see (to taste)
  10. water - watch the video to see (for cooking potatoes)

Instructions

  1. Prepare the sausages: Slice the sausages in half, then in half again and cut into cubes.
  2. Prepare the potatoes: Cut potatoes into cubes and keep them in water to prevent discoloration.
  3. Cook the sausages: In a pan with hot oil over medium heat, add the sausages and brown for 7-8 minutes.
  4. Cook the potatoes: In the leftover oil, add potato cubes, season with salt, and fry for 4-5 minutes. Add a splash of water, lower heat, and cover.
  5. Add onion: After 7 minutes, add chopped onion and fry until both potatoes and onion are golden.
  6. Combine ingredients: Add the sausages back in, then add tomatoes and sliced chili. Stir and let cook for 5 minutes.
  7. Finish the dish: Add cilantro and cheese, turn off heat, and cover until cheese melts.
