Prep Ingredients: Finely dice half an average-sized onion and peel a couple of cloves of garlic.
Heat Oil: Heat 2 tablespoons of extra virgin olive oil in a large sauté pan.
Cook Onion: Add the diced onion to the pan and cook for 3 to 4 minutes until translucent.
Add Garlic and Spices: Crush in the two cloves of garlic, then add about 1/2 teaspoon of crushed red pepper flakes.
Incorporate Tomato Paste and Cream: Add 3 ounces of tomato paste and 3 ounces of heavy cream to the pan.
Add Vodka: Stir in 1 ounce of vodka into the sauce.
Combine Pasta: Transfer the pasta, when it's about a minute shy of your preferred level of dness, directly into the sauté pan to finish cooking in the sauce.
Adjust Consistency: Gradually add reserved pasta cooking water, 1/4 cup at a time, until the sauce reaches your desired consistency.
Add Parmesan: Remove the pan from the heat and immediately add 1 ounce of freshly grated Parmesan.
Serve: Plate the pasta and optionally grate a little more Parmesan over the top before serving.
