Ingredients

  1. extra virgin olive oil - 2 tablespoons (2 tablespoons)
  2. onion - 1/2 (half an average sized, finely diced)
  3. garlic cloves - 2 (peeled)
  4. crushed red pepper flakes - 1/2 teaspoon (about 1/2 teaspoon)
  5. tomato paste - 3 ounces (3 ounces)
  6. heavy cream - 3 ounces (3 ounces)
  7. vodka - 1 ounce (1 ounce)
  8. pasta - watch the video to see (cooking until 1 minute shy of preferred dness)
  9. pasta cooking water - watch the video to see (reserved, add 1/4 cup at a time as needed)
  10. freshly grated Parmesan - 1 ounce (1 ounce, plus more for serving)

Instructions

  1. Prep Ingredients: Finely dice half an average-sized onion and peel a couple of cloves of garlic.
  2. Heat Oil: Heat 2 tablespoons of extra virgin olive oil in a large sauté pan.
  3. Cook Onion: Add the diced onion to the pan and cook for 3 to 4 minutes until translucent.
  4. Add Garlic and Spices: Crush in the two cloves of garlic, then add about 1/2 teaspoon of crushed red pepper flakes.
  5. Incorporate Tomato Paste and Cream: Add 3 ounces of tomato paste and 3 ounces of heavy cream to the pan.
  6. Add Vodka: Stir in 1 ounce of vodka into the sauce.
  7. Combine Pasta: Transfer the pasta, when it's about a minute shy of your preferred level of dness, directly into the sauté pan to finish cooking in the sauce.
  8. Adjust Consistency: Gradually add reserved pasta cooking water, 1/4 cup at a time, until the sauce reaches your desired consistency.
  9. Add Parmesan: Remove the pan from the heat and immediately add 1 ounce of freshly grated Parmesan.
  10. Serve: Plate the pasta and optionally grate a little more Parmesan over the top before serving.
