Instructions

  1. Prepare the Potato: Grate approximately 1 kilogram of potato. Squeeze out all the water from the grated potato using an old napkin or a cloth.
  2. Caramelize the Potato: Add about half a centimeter of butter to a pan. Add the grated potato, focusing on the edges. Add thinly sliced onion or shallots on top, with a little bit of butter in the middle to help conduct the heat.
  3. Cook the Rosti: Pad out the top with more potato and compact it nicely. Carefully flip the rosti in the pan and cook for about 45 minutes until caramelized and crispy.
  4. Serve: Remove the rosti onto a rack to avoid sogginess. Serve with fried eggs on top for a perfect brunch dish.
