Ingredients

  1. tomahawk steak - 1.2-1.5 kg (1.2-1.5 kg)

  4. olive oil - watch the video to see (enough to fry)
  5. butter - watch the video to see (a good dollop for frying)
  6. rosemary - watch the video to see (a few sprigs for flavor)
  7. garlic - watch the video to see (a few cloves for flavor)

Instructions

  1. Preparation: Take the tomahawk steak out of the refrigerator and let it temper at room temperature for about 30 minutes to an hour.
  2. Season the Steak: Season the steak with salt and pepper all over.
  3. Fry the Steak: Heat a pan with olive oil and fry the steak until golden all over, about 3 minutes on each side, including the edges.
  4. Add Butter and Aromatics: Add a dollop of butter to the pan along with rosemary and garlic cloves to infuse the fat with flavor.
  5. Oven Roasting: Transfer the steak to a preheated oven at 200 degrees Celsius with convection and roast for 6 minutes. Take it out, let it rest for 6 minutes, then roast for another 6 minutes and finally let it rest for 10-15 minutes outside the oven.
  6. Resting the Meat: After the final oven session, let the steak rest for about 10-15 minutes without covering it to prevent overcooking.
  7. Serving: Slice the rested steak and serve.
