Agria potatoes - 3-4 per person (peeled and left in cold water overnight, low starch content preferred)
Salt - to taste (for seasoning water to the salinity of sea water)
Duck or goose fat - as needed (for roasting, 50/50 ratio with cooking oil if desired)
Cooking oil - as needed (for roasting, mixed with duck or goose fat)
Garlic - as needed (pads, added last to avoid burning)
Fine salt - to taste (for final seasoning)
Instructions
Preparation: Peel Agria potatoes and leave them in cold water overnight.
Boiling: Place potatoes in salted water and boil for about 35 minutes until very soft. Stir every 5 minutes to ruffle the edges.
Draining and Steaming: Drain potatoes and let them steam dry. Give them a good ruffle to fluff up the edges and let them steam for a few more minutes.
First Roast: Preheat oil mixed with duck or goose fat in a roasting tray until smoking. Carefully add the potatoes, ensuring they are well coated. Roast at 180°C for 40 minutes.
Adding Garlic: Add pads of garlic for the last 10 minutes of roasting to avoid burning.
Final Seasoning: After roasting, transfer potatoes to a tray and season with fine salt.
