  3. water - 20cl
  4. pink salt or sea salt - 1 tablespoon
  5. cane sugar - 50g (complete or any sugar available)
  6. coriander seeds - 1 teaspoon
  7. allspice - 1 teaspoon
  8. black peppercorns - 1/4 teaspoon
  9. thyme - 1/2 teaspoon

Instructions

  1. Prepare Onions: Cut the red onions into rounds or half-rounds, according to preference.
  2. Add Spices to Container: In a container that can be sealed tightly, add allspice, coriander seeds, black peppercorns, and thyme slices.
  3. Add Onions: Place the cut onions into the container with the spices.
  4. Prepare Vinegar Brine: In a saucepan, mix water, cider vinegar, cane sugar, and salt. Bring the mixture to a boil.
  5. Combine and Seal: Pour the boiling vinegar brine over the onions in the container. Seal the container tightly.
  6. Cool and Store: Let the container cool to room temperature, then store it in the fridge. The pickles can be kept for weeks or even months, improving in taste over time.
