Instructions
Prepare the Meat: Heat the meat and onions with thyme, bay leaf, and bouquet garni. Add four spices and mix well.
Layer the Moussaka: In a baking dish, layer the meat mixture, sliced tomatoes, and drizzle olive oil. Sprinkle cheese between layers.
Make Béchamel Sauce: In a saucepan, melt butter and add flour to make a roux. Gradually add milk, stirring continuously. Cook for about 5 minutes until thickened. Add cheese to the béchamel sauce.
Assemble and Bake: Pour béchamel sauce over the layered moussaka. Bake in a preheated oven until golden and bubbly.
