  6. heavy cream - 1/4 cup (1/4 cup)
  7. all-purpose flour - 1.5 tablespoons (1.5 tablespoons)
  8. seafood stock - 2/3 cup (2/3 cup)
  9. Dijon mustard - 1 teaspoon (1 teaspoon)
  10. cayenne pepper - 1/4 teaspoon (1/4 teaspoon)
  11. sweet paprika - 1/2 teaspoon (1/2 teaspoon)

  13. egg yolk - 1 (1 large)

Instructions

  1. Prepare Lobster Tails: Separate lobster meat from the shell, cut into chunks, and steam both meat and shells separately in the microwave.
  2. Butter Poach Lobster: Melt butter in the microwave, pour over lobster meat, cover, and microwave at 30-second intervals until cooked to 135°F.
  3. Make the Sauce: Microwave minced shallot, add garlic, then thicken with a mixture of heavy cream and flour. Add seafood stock, mustard, spices, and a splash of brandy.
  4. Finish the Sauce: Temper in an egg yolk to the hot sauce mixture for richness.
  5. Assemble and Serve: Mix lobster meat with sauce, fill shells, top with Gruyère, and microwave or broil until cheese is melted. Garnish with tarragon.
