Prepare Tofu: Drain and press tofu to remove as much water as possible. Cut into slices, then into desired size.
Fry Tofu: Heat oil in a frying pan over medium-high heat. Add tofu and fry until golden brown. Do not flip too quickly. Once fried, place on a paper towel to absorb excess oil.
Prepare Awaze Sauce: In the same oil used for frying tofu, sauté onions for about a minute. Add a spoonful of garlic and ginger, and chili pepper if using.
Combine Tofu with Awaze Sauce: Add the fried tofu back into the pan with the onions, garlic, and ginger. Add house special seasoning, salt, and white pepper. Fry together for five to six minutes.
Serve: Serve the fried tofu hot, garnished with fresh onion and garlic if desired.
