Ingredients

  1. ground chicken thigh - 350 g
  2. sweet soy sauce - 1 tbsp
  3. oyster sauce - 1.5 tbsp (plus 1/2 tbsp for cooking)
  4. Maggi sauce or fish sauce - 1 tsp
  5. garlic - 4 (cloves)
  6. shallot - 4 pc
  7. red curly chili - 5 pc
  8. green Thai chili - 8 pc
  9. lemongrass - 1 stalk (white part only)
  10. shrimp paste - 4 g (roasted)
  11. oil - 2 tbsp
  12. sugar - 2 tsp
  13. pepper - ¼ tsp
  14. stock powder - ½ tsp
  15. lemon basil - 25 g
  16. small shallot - 10 pc

Instructions

  1. Marinate the Chicken: In a bowl, mix ground chicken thigh, sweet soy sauce, oyster sauce, and Maggi sauce. Stir well.
  2. Prepare the Aromatics: Finely chop garlic, shallot, and lemongrass. Slice red curly chili and green Thai chili.
  3. Sauté Aromatics: Heat a little oil. Sauté garlic and shallot until fragrant. Add shrimp paste, lemongrass, red curly chili, and green Thai chili. Sauté until fragrant.
  4. Cook the Chicken: Add marinated chicken and cook until done. Add whole small shallots, sugar, pepper, stock powder, and oyster sauce. Cook briefly.
  5. Finish with Lemon Basil: Add lemon basil and cook briefly.
