Prepare biscuit mixture: Break biscuits into pieces and set aside. In a bowl, beat the butter well. Add icing sugar and beat until creamy. Gradually add melted chocolate and beat until well combined. Add chopped almonds and biscuits, then fold gently.
Set the cake base: Line a 7-inch springform baking pan with butter paper. Add the prepared mixture and spread evenly. Cover with cling film and refrigerate for 2-3 hours.
Prepare chocolate ganache: In a bowl, add cooking chocolate and cream. Microwave for 1 minute and mix well. Add butter and microwave for 30 seconds, then mix until chocolate melts. In a small bowl, whisk instant coffee with warm water until dissolved. Add dissolved coffee to the melted chocolate and mix well. Set aside.
Assemble and garnish: Carefully remove the cake from the springform pan. Pour the prepared chocolate ganache over the cake. Garnish with whipping cream and sprinkles. Serve chilled.
